Chocolate Chip Muffins

 I make  hot breakfast almost every day of the week. Not by choice so much, but because my kids don't like cold cereal. There is whining every time I pull it out. They seem to go for muffins every now and then, especially if I SAY they are "cupcakes." Here's a favorite.

Chocolate Chip Muffins

Ingredients
Dry
2 cups flour (1 1/2 cups white, 1/2 cup wheat works great)
1/3 cup brown sugar
1/3 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt

Wet
2/3 cup milk OR 3/4 cup buttermilk
1/2 cup melted butter
2 lightly beaten eggs
2 teaspoons vanilla

1/2 cup chocolate chips.

First mix the dry ingredients together.


Then mix the wet ingredients. The butter will start to go back to a solid state if your milk is cold, it's ok. If you like heavier muffins, use the buttermilk.


Mix the wet ingredients into the dry ingredients until just combined.


Now stir in the chocolate chips.


Whoever had the idea to use the ice cream scoop for batters is a genius. Spoon into greased muffin tins, or use paper linings. Bake in a 375 degree F oven for 10-12 minutes.



Remove from oven and let cool in pan for 5 minutes. Then turn out onto a cooling rack for another few minutes. 



MUST serve with a glass of milk!
