Easy Pickles

A lot of people veer away from canning some of their own food because they think it is too hard. Putting up food is easy, it just takes learning the steps and then having the confidence to do it. Here is a great easy recipe to start out with. So easy.

First pack your small cucumbers in a jar, as many as you can. One of mine got big, oh well.

Now add 1 Tablespoon of salt, 1 Tablespoon of sugar, 1/4 teaspoon of granular alum, and a whole garlic.

After that, pour 1/2 cup of white vinegar over top and top off with water, leaving 1/2 inch of head space. I cut one of mine to fill in the spaces. It works, but the cut ones aren't as crunchy.

Now squish in some dill. One large or a few small. Just make sure you'll be able to get the lid on.

Microwave on high for 3 to 4 minutes, looking for boiling bubbles. Don't do longer than 4 minutes. Using hot pads, pull them from the microwave and put the lid and screw band top on. It will seal on it's own. Set aside. Let cure for six weeks.

This is so easy and so good. Plus you can do only one jar at a time!

Here's the ingredients list:

Small cucumbers
1 Tablespoon salt
1 Tablespoon sugar
1/4 teaspoon granular alum OR a pinch of powdered alum
1/2 cup of white vinegar
fresh dill heads (very easy to grow in your garden, just pick up a packet with your other seeds)
