Frito Casserole

You'll want to put this one in your rotation for sure. Kids and adults alike go for a meal with Fritos on the top.


1 pound ground beef
2 -15.5 ounce cans of small red beans
1 - 8 ounce can of tomato sauce
1 1/2 cups water
1 envelope of McCormick Enchilada Sauce
Dried or fresh diced onion
1 bag of Fritos corn chips
2 cups of cheddar cheese

Brown the ground beef with the onion.

While the ground beef is cooking mix up the enchilada sauce.

Combine tomato sauce, water and the envelope of enchilada sauce mix. Whisk together and bring to a simmer. Simmer for 5 minutes.

Drain the red beans and add to the ground beef.

Now add the enchilada sauce. I was wishing I'd used a bigger skillet! Mix thoroughly.

Pour mixture into a greased 9 by 13 inch pan and cover with corn chips. I don't use the whole bag, but you certainly can.

Add the cheese. I have a picky eater that doesn't like cheese. I do cater to some people around here. :)

Place uncovered in a preheated 350 degree oven, and bake for 20 minutes.

If you live close to where you can get some of these, you should. Dehydrated refried beans! Beats the heck out of the canned beans, AND only 2 ingredients, beans and salt. We try to eat real food around here. The smaller the list of ingredients, the better.

Serve it up with refried beans, chopped lettuce, sour cream, and you'll feel like you are in a Mexican restaurant. Sometimes I add rice too, but it's a lot of food. Even my kids absolutely LOVE the refried beans.
