New Peas and Potatoes

 If you live on or near a potato farm you've probably eaten potatoes this way before. It is always an exciting time of year when the potatoes are just big enough to enjoy. Small, young and tender potatoes, or red potatoes will work too.


3-4 cups red or young potatoes, quartered or bite size
1 cup of peas
4 Tablespoons of butter
4 Tablespoons of flour
1 1/2 cups milk
1/2 teaspoon salt and more to taste
pepper to your liking

Boil the potatoes until soft.

Boil the peas until done, but not mushy. Drain the water from the peas and potatoes, and set them aside.

Melt the butter in a large pot over medium low heat. When butter is completely melted add the flour and whisk together. You only want to cook it into a little color like this: Turn the heat down if it's cooking too fast and turning dark.

Add the milk slowly and whisk out the lumps.

It will start to thicken, this is just about right. If you want a thinner sauce you can add more milk. Add the salt and pepper. Turn the heat to low.

Add the peas and potatoes into the sauce. Stir well until coated.
