Peanut Butter Oatmeal Cookies

 Ok, I'll admit it. Sometimes I turn to food for comfort... after a day like today, it was time to make cookies. Let me just say that I have 3 cows, a calf, and a bull with pink eye, that have to wait for tomorrow before I can get the help I need to doctor them. On top of that I've got four kids that keep life.... interesting... and a house, garden, pets, meals... you name it, I have to do it. ANYWAYS, enough whining from me. Let's make cookies!

I've heard people call these "Monster Cookies" before, but I picked this recipe up from my brother's wife, and they're almost my favorite, second only to regular old chocolate chip.

1 cup soft butter
1 cup peanut butter
1 cup white sugar
1 cup brown sugar
1 teaspoon vanilla
2 eggs
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 cups oatmeal
1 1/2 cup all purpose flour
2 cups chocolate chips
Bake at 350 degrees F for 12 minutes.

Makes four dozen

Cream the butter and peanut butter. I only had chunky today, so you can use either chunky or smooth.

Add the sugars and mix well.

Now add the vanilla and eggs. Mix until smooth.

Add the baking powder, baking soda, salt and the oatmeal. Mix it up!

Mix in the chocolate chips. Maybe add a touch of flour to get your dough just past the too sticky to handle stage. This is just right.

Scoop them onto a baking sheet using your trusty ice cream or cookie scoop.

Now it seems to me that everyone likes their cookies a little bit different. At least everyone in my family. Some eat the dough. Some like them gooey, just barely done. Others like them just as the recipe calls for. Then there is soft, yet a slight crunch on the outside. Of course I always do some in honor of my Grandma- CRUNCHY all the way through. Think of it this way. Make cookie dough once. Get five different kinds of cookies. Variety is good.
