Buttermilk Pancakes The Breakfast of Ranchers

I used to hate pancakes as a kid. I couldn't stand the heavy, hard to swallow, way too sweet pancake in the morning. I sort of fell into making homemade pancakes because I couldn't bring myself to buy the expensive pancake mixes. It doesn't take much longer to add flour, baking powder, soda, and salt to egg, oil, and milk, than it does to add it to a mix. These taste much better too.

Whole Wheat Buttermilk Pancakes
1 cup whole wheat flour, white, or a mixture
1 teaspoon salt
2 teaspoons baking powder
1/4 teaspoon baking soda
2 teaspoons sugar

1 egg
1 cup buttermilk
1/4 cup oil

Mix wet and dry separately.


Do not over mix. This is where people go wrong with pancakes. If you mix too much they will be heavy and hard to swallow.



I use my ice cream scoop for everything scoopable! It's perfect for pancake batter too. I think you know when to flip a pancake.



We like our pancakes here on the ranch, but we're not IHOP. These are home made, any shape goes ranch cakes going on! I know it's funny, but my kids eat better when they don't have some huge platter of food in front of them. Less overwhelming I guess. We do small pancakes around here. I like to cook them after the bacon and get some of that flavor in there.


Gotta love home grown, home cooked breakfasts on the ranch. Sometimes I think I'd like to run a bed and breakfast... working ranch style.
