Pizza Dough or French Bread

We eat a lot of whole wheat around here, so I don't feel bad when I make white pizza dough every now and then. This recipe is the best I've found. It can also be made into French Bread.

Ingredients

3 cups warm water
2 Tablespoons sugar
1 Tablespoon salt
2 Tablespoons olive oil
2 Tablespoons yeast
About 8 cups all purpose flour

Mix the warm water with the sugar, salt, and olive oil.
Mix in three cups of flour.
Now take a cup and mix together the yeast and about 1/2 a cup of flour.
Add that to the dough and mix well. Now start adding the flour one cup at a time. This is what it looks like when I change to the dough hook. This is after 2 more cups.
Finish adding the rest of the flour, about 3 more cups. It should start to clean the bowl, be soft, but not too sticky.
Remove the dough hook and let it rise right there in the bowl. Don't ever do more dishes than you have to. :) After about an hour it will be doubled in size.
Pour the dough onto a greased counter top. Cut it into four pieces. You can make all four of them into pizza if you have a big crew, or some into bread. Simply place the other dough in bread pans. Let them rise to double again and then bake at 375 for about 25 minutes. If making one pizza, then make the other three into two loaves. They get bigger and look better. I look for the larger piece of dough when I'm making a single pizza for my family. It will feed our family of six, with some salad on the side. 
Take your ball of dough and place it in the middle of your greased pizza pan. (A cookie sheet works too.) Start working it outward.
Now using a thumb to stretch it to the edges and the other hand to hold it in place, go around the whole pan, pulling the dough to the edge. You may have to do it a couple times to get it to stay.
My mom used to let me poke holes in the dough with a fork. So I let my kids do it too. Not sure what for though....keep it from bubbling up perhaps.
Spread the pizza sauce.
Put your toppings on. I have a child that doesn't like cheese, and one that doesn't like pepperoni. This is our made to order family size pizza I guess. Use whatever cheese you like. 
Bake at 425 for 15 to 20 minutes.
 Sometimes I split the dough up and let everyone make their own little pizza and put them on cookie sheets to bake. When you have the time and patience, kids love this!
