Butternut Soup

I'm not much for fancy recipes, but this one is a keeper. My mother in law gave it to me a few years back and she must've gotten it from someone who served it at a fancy luncheon. So simple easy, yet elegant... I think. My oldest and youngest ate it up, the middle ones weren't too sure. I didn't tell them the name of it, I said it was Halloween Soup. But that didn't seem to help...

Butternut Soup

1 large butternut squash, peeled and diced
1 medium sized onion diced
1 nickel sized piece of fresh ginger root peeled and diced 
 1 teaspoon ground ginger
5 cups chicken broth or stock
1 cup of half and half

Season to your liking with salt and pepper. I only used pepper because it was salty enough for me.

Pour the chicken broth in a big pot. Add the diced squash, onion and ginger. Bring to a hard boil and cook until the squash is soft.
That you see on the top of mine is candied ginger. I ordered it from a company thinking it would be a sweet treat instead of chocolate. WOW, it's strong and not meant to be eaten like candy!
 Let it cool, then puree to a smooth consistency. Return it to the pot and add the 1/2 and 1/2. Warm to desired temperature. Add the pepper to your liking. Sprinkle some chives on top for color. I served mine with some french bread, you can find that recipe HERE. Mmmm it is smooth and has a buttery taste, lovely!
This soup is perfect as an appetizer or a light meal. You may need some dessert after this. :) Don't worry, there are plenty of dessert recipes in my recipe section!
