Carrots

This will be one of my shortest posts because carrots can be so easy to preserve. That is, if you don't can or freeze them, and have a cool dry place to keep them that doesn't freeze.
Dig up all your carrots and cut the tops off.

  Layer them in a plastic 5 gallon bucket or something similar. 
 Carrots, then newspaper. More carrots and newspaper.
 Place a pair of old jeans or a heavy shirt over the top.
Store in a cool dry place. Fresh carrots for 4-5 months. No canning, no blanching. Now that's my kind of food preservation!
