Oatmeal Ginger Cookies



I know, I know. I make too many cookies... ALL THE TIME. But think of how many treats you would make if you had to send your family with lunches all week long! Not to mention the ones I eat! I was fumbling through recipes Sunday afternoon, feeling tired of all my cookie recipes. I asked the family what kind of cookies they wanted. I got two different answers, so I wondered what would happen if I combined them. Ginger Snaps, and Oatmeal. I didn't know if that was even appealing to anyone but me, so I looked online to see if anyone had every done it. Sure enough it has been done. I adapted a recipe to my liking and this is what I came up with: A very scrumptious cookie that is very unique... and almost gone after only one day... I don't want to make more treats this week!!!!

Oatmeal Ginger Cookies
Ingredients
1 cup butter (2 sticks)
1 cup white sugar
1 cup brown sugar
3 eggs
1/2 cup molasses
2 1/2 cups white flour
1 cup wheat flour
2 heaping cups of oatmeal
2 teaspoons baking soda
2 teaspoons ground ginger
1/2 teaspoon salt

Cream the sugars and the eggs, add the molasses and cream again. Add the baking soda, ginger and salt. 

Then mix in the flours and oatmeal. Its a pretty sticky dough. Spoon onto non greased cookie sheet and bake at 350 degrees Fahrenheit for 10-12 minutes.





 These make me think of an old fashioned cookie, like maybe before there were chocolate chips and shredded coconut and such- chewy, tasty and so good!
