Breakfast Navajo Tacos


My kids do not like cereal for breakfast. So I'm always looking for simple, quick and easy breakfasts I can whip up on school days. We had navajo tacos the other night and a few leftover scones, so I thought why not make breakfast navajo tacos? The kids liked it, what more can I say?

Here is the recipe my mom uses for the fry bread that she always called "scones." But any bread dough would work.

1 1/2 cup milk
1/4 cup water
1 T shortening (I use butter)
1 T sugar
Heat these together in the microwave or stovetop until very warm but not hot enough to kill the yeast.

1 T yeast mixed with 1 cup of flour.
Add this to the warm liquids.
Then mix together 1 teaspoon of baking powder and 4 more cups of flour, (you can use some whole wheat too) and mix this with the liquids.
Let it raise about 30 minutes.

Then you simply take small or large pieces and spread them out with your hands and drop them into your oil.  I put a small piece of dough in the oil to test the heat. If it floats and fries quickly you know it's hot enough. If it sinks without bubbles you know it's not.



Flip it over when it is light brown, then brown the other side. Easy.

Next add whatever toppings you wish. For breakfast I did browned sausage, scrambled eggs, salsa, cheese and sour cream.

This can also be used as a dessert with butter, sugar and cinnamon. Or honey butter, or jam. Anything really. YOU MUST LEARN HOW TO MAKE THIS FRY BREAD BECAUSE IT IS DELICIOUS AND VERY VERSATILE!!!!
