 Family Favorite Roast Beef

You literally can use this meat in anything that suits your fancy. Here are a few ideas besides straight out of the crock pot: French Dip Sandwiches,  Enchiladas, Fajitas, Soup, Pot Pie, Shepherds Pie. If you want to freeze it for later, just put it in a freezer bag, let cool, label and use within a month for best flavor.

Spray crock pot with non stick spray and place frozen roast on bottom, fat side down. Add 1 and 1/2 Cups of water over the top so the seasoning will stick. Then add two beef bouillon cubes and sprinkle LIBERALLY with McCormick's Montreal Steak Seasoning. Put lid on and cover with a kitchen towel. Cook on high for 7-8 hours. I know it seems like a long time, and not a lot of water, but you want to steam the meat, not boil it. Because it's frozen it will let off a lot of it's own juices too. Of course if it's not frozen, then you could cook it on low and add maybe 1/2 cup of water. All crock pots seems to cook differently, so watch it if yours cooks faster.

Use two forks to shred it up.

Tonight I sauteed some onions in butter with garlic and herbs, a couple dashes of liquid smoke, and put them on my sandwich. I didn't even need sauce. Perfect!
